Raspberry or Blueberry Muffins

  
Finally raspberries and blueberries don't cost an arm and a leg!  We've been making these:

2 cups flour
1 cup sugar
1 TBS baking powder
1/2 tsp. salt
2 eggs
1 cup half-and-half cream
1/2 cup vegetable oil
1 tsp. lemon extract
1 1/2 cups fresh or frozen blueberries or raspberries, whatever you'd prefer

In a large bowl, combine flour, sugar, baking powder and salt.
Combine the eggs, cream, oil and lemon extract: stir into dry ingedients just until moistened.
Fold in berries, carefully.
Spoon into paper lined muffin cups.
Bake at 400 for 18-20 minutes.
Yields 18 muffins.

    Also, I have to say that the new family portrait in your sidebar is INCREDIBLE!!! I'm sure the moment was full of reality - siblings poking each other, everyone ready to bolt at the first opportunity, someone refusing to smile...but it is an absolutely gorgeous picture of all of you, and especially YOU, who is always behind the lens instead of in front of it. You look like you're ready to go sailing in your fabulous striped top and crisp white pants. Makes me want to book a vacation to Seaside asap! Or at least find a cute striped top :)

  3. Ooh, we'll have to try those! Our blueberry bushes are producing about a cup a day, perfect for summer baking.     LOVE your fancy shmancy organization tips in the last post as well. I always start on some big system as well but always revert back to writing little scribbles of notes all over the place on littel scratch pieces of paper. Maybe I just need to invest in a notebook :)

    There is a blueberry picking farm about 5 minutes from where we live so I need to find out if its time to go.

  12. I've never seen cream in muffins, so I had to add up your recipe: 133 calories per muffin!! I'll bet they are delicious, but at my house, they would be made with whole grain flour (wheat or spelt), no sugar, skim milk (or dry milk + water), no oil (add applesauce). Still delicious, but SO much better for your arteries.

  13. Just wanted to say that I made your blueberry muffins yesterday and they turned out awesome. I didn't have any cream so I substituted nonfat milk and used lemon juice instead of the extract. They were still super yummy!

    I have to laugh at the previous comment because 133 calories for a muffin seems like a bargain to me:)

  20. My son and I made these today for his birthday breakfast! He is 4 today, my only little one (so far). Thank you for the recipe, I was going to add flax seed & wheat germ, as I do most recipes, but I decided to throw that out today for the special day. They were delicious!
