Ritz Chicken Strips




An easy family favorite.  

1 to 1 1/2 rolls of crushed Ritz crackers

3-4 boneless skinless chicken breasts cut into strips (about 1 and 1/2 pounds of chicken)

1 cup mayonnaise

1 tsp dried mustard

1 tsp garlic salt

2 TBS of olive oil


Preheat oven to 350 degrees.

Coat a baking sheet or pan with the olive oil.

Crush Ritz crackers-I usually can get away with doing this right in the package.  Put the crushed crackers in a medium sized bowl.

Combine mayo, mustard and salt and mix together in a separate medium sized bowl.



I put all the chicken in the mayonnaise mixture and stir it up.  The chicken strips should be coated in this mixture.

Take each strip out and press firmly the chicken strip firmly into the crackers to coat both sides.  

Lay the strip on the baking sheet or pan and then flip it over-you want a little oil on both sides of the chicken.


(I saved what I didn't think we would eat to freeze and have a meal later.)

Bake at 350 degrees for 25 minutes.

This chicken is great alone or on a salad.

  1. I do something similar with Italian bread crumbs instead of Ritz and mayo mixed with parmesan cheese. Both my kids claim it's their favorite meal!
