Grilled Mini Sweet Peppers


One day in the grocery store, I couldn't resist buying this big bright bag of mini sweet peppers.  I had no idea what I was going to do with them-I doubted any kids but my oldest (who eats anything and everything) would eat them plain.

I decided to throw them on the grill with some chicken that evening.  

I took off the green caps, threaded them on wood skewers, brushed them with olive oil and sprinkled them with some course kosher salt.  I left them on till they were just slightly soft and had some pretty grill marks on their sides.

They were delicious and gone in seconds.

  1. I think almost all veggies are better grilled! We grill peppers, portabella mushrooms and zucchini and thick red onion slices all summer long. Surprisingly grilled green beans are one of our new favorites. Love to see you blogging this summer- your blog always encourages my mama heart.

  5. We love these too! Oh how I've missed your blog. You've encourged me more than you know. I had HG with 1 of my 3 boys which made give up my dream of having more kids. After reading your story and knowing you have 6(!) despite HG we prayed and went forward and got pregnant. I got HG just as severe, but we now have a 5 month baby girl! I am so encourged by your parenting style and home posts. Thank you :) Hope your summer is going well!

  6. I buy these quite often, less oricey than full bell peppers and they have a nice sweetness. I'm going to try grilling them next, thanks for the tip:).
