Banana Muffins

When I have too-ripe bananas I usually:
1. freeze them for smoothies
2. make banana bread with them
3. or make these very-low-sugar banana muffins.

I was in the mood for muffins, but I couldn't use the no-sugar recipe because I was out of sour cream, so I tried a new recipe.

These were good.  I cut down the sugar from the original recipe, hoping my bananas were sweet enough and they were.

1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 large ripe bananas
1/2 cup white sugar
1 egg
1/3 cup butter melted

Mix together and pour into greased muffin tins.  Bake at 350 for 25 minutes.
(Yield : 12.)

  1. I'm publishing a review on my blog tomorrow (the 10th) on the 2nd edition of Deliberate Motherhood. I just want to thank you for your chapter in there about a Deeper Yes. It has made a HUGE difference in my life and I use the phrase often when talking to friends who are too stressed out because of being spread too thin. Anyway, I just wanted to thank you so much for your wisdom in the book and this blog, you have helped transform my Mothering significantly!

  2. Perfect timing Sarah! I have brown bananas on my counter that I was going to make something with today, but I wasn't sure what to make. I'm sure my kids will thank you too after school.

  3. Whenever I open your blog, 4 extra blank windows open. Not sure if that is just me?

    1. Me too. Been happening for a few weeks now in Internet Explorer. :(

  4. Perfect for my brown bananas too! And perfect for my little one on board the potty train, to be my helper, as we camp out at home!!!

  5. I saw this recipe yesterday morning, so I waited for my kids to come home from school, then we made these. Everyone loves them. I also took some to work last night, so I got to share your recipe again.
    Thank You!

  6. These look delicious! Thank you so much for your posts, I love receiving them in my email. Each Monday, I have a link up for meatless recipes. I would love it if you'd share this recipe with my readers. If you're interested, you can link up at www.LittlestSweetPea.com

  7. We love banana muffin here as well. I am going to give these a try...I like that they do not have sugar in them. I am trying to cut back on sugar here but it is so hard because sugar is in everything!

  8. Going to add these two recipes (bread and muffins) to my Banana Cake Challenge at the moment. Just made Upside Down Banana cake with golden syrup and banana topping, see what you think.

  9. I just made these this morning, except with the crumb topping (banana crumb muffins from allrecipes.com). Super yummy. I might have just had two of them as a before-bed-snack...

  10. These were great- sweet without the excessive sugar, just like you said. I added a dash of vanilla to mine as well. All 4 kids and the husband gobbled them up- even the baby who isn't much of an eater yet.
