Blueberry Zucchini Bread

This recipe makes 4 mini-loaves.  Perfect for sharing.

3 eggs
1 cup vegetable oil
3 teaspoons vanilla extract
2 cups white sugar
2 cups shredded zucchini
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
3 teaspoons ground cinnamon
1 pint fresh blueberries

Preheat oven to 350 degrees.  Lightly grease 4 mini-loaf pans.

In a bowl, beat together eggs, oil, vanilla, and sugar.  Fold in the zucchini.  Beat in the flour, salt, baking powder, baking soda, and cinnamon.  Fold in blueberries and transfer to mini-loaf pans.  (They will each be pretty full.)

Bake for 40 minutes or until a knife inserted in center comes out clean.   Cool in pans.

  1. Making some today--YUM! Thanks for sharing your recipes, it is always so nice to come up with a new treat, or side dish or main dish for dinner. I don't know about you, but I am tired of the same old stuff and welcome new ideas, or old ones I forgot about. Thanks, Sarah.

  2. Yum...sounds delicious! Thanks for sharing.

  3. Thanks for sharing....looks wonderful!

  4. Would that come out to 2 regular loaf pans? I only have 1 mini loaf pan and don't relish the thought of baking them one at a time;)

  5. Always make zucchini bread but never with blueberries. I'll have to try that next time. Thanks for sharing!

  6. Looks beautiful! I don't think I would have thought to combine those two but it sounds great!

  7. Hi Jennifer-I don't know...I think it needs smaller loaves because it is so dense, but maybe a longer cooking time would do it? Good luck!

  8. oh yum! I cant wait to make a batch!

  9. Just came out of the oven and had a slice with a bit of butter (but I don't think it needs it)! This is such a fantastic recipe! I think it would make wonderful muffins too! I actually used frozen blueberries because it was all I had on hand and it worked perfect! Thanks so much for sharing! I found this via pinterest :D
