Jenny’s Eggy Casserole

My friend Jenny made this for us when I was sick and it was gobbled up so quickly I had to ask for the recipe.  I’ve made it many times since then and it is always a hit.  It refrigerates well after baked, so the kids can have a piece before they go to school in the morning (high school growing boy breakfast for sure) if there are any leftovers.

Jenny’s Eggy Casserole

Grease a 9 x 12 pan (I use cooking spray).

Whip 8 eggs.

Add 3 cups of milk.

Add 1 tsp salt and 1/2 tsp pepper.

Tear up 8 cups of bread-I’ve always used 5-6 English Muffins, but any bread would do.

Add 8 oz of ground cooked sausage (I only use 1/2 the 16 oz. package and save the rest so it’s not too heavy on meat.)

Pour into the pan.

Top with 2 cups of shredded cheese (I’ve used provolone or cheddar.)

Chill overnight.

Bake for 40 minutes, at 350 degrees.

    My Mother in Law makes something very similar for Christmas brunch every year. What other dishes did you get when ill or have given to others when they have been carrying a heavy cross?

    Trying it this morning! In the oven now! I added a little bit of garlic powder and a couple of light dashes of cayenne pepper (have an 18 year old who loves heat!) So excited to see how it turns out!! Thanks! ** From one cancer survivor to another! I was stage IV 5 years ago (ER,PR, HER2+) and now 'm NED! So keep on trucking (as we say in the South!).
