Easy and Delicious Apple Bars

In case you need something to whip up quick tomorrow-this requires no mixer and is absolutely delicious.  This recipe makes an 9×9 pan, so double if you need more.  I go easy on the topping-I use about half.

1 cup sifted flour

1 tsp baking powder

1/4 tsp salt

1/4 tsp ground cinnamon

1/4 cup butter, melted

1/2 cup brown sugar

1/2 cup white sugar

1 egg

1 tsp vanilla extract

1 cup chopped apple (any kind)

For topping:

1 TBS white sugar

1 tsp ground cinnamon

Preheat oven to 350.

Grease 9×9 inch pan.

Sift together dry flour, baking powder, salt and cinnamon. Set aside.

In a large bowl mix together melted butter, brown sugar, and 1/2 cup white sugar with a wooden spoon till smooth.

Stir in egg and vanilla.

Blend in flour mixture until just combined, then add apples.

Spread the mixture evenly in pan.

In a small cup stir together sugar and cinnamon for topping and sprinkle evenly over top.

Bake for 25 minutes.  Cool in pan and cut into squares.

Great with a scoop of vanilla ice cream or whip cream.
