Fresh Air and Weekly Menu

 Well, it is a balmy 35 degrees outside today and I felt like after our morning chores were finished and lunch was eaten, we needed to fill our lungs with some fresh air.  It felt good!

We are ready for February, the month of love, aka the month of chocolate-which also seems to be the month of October (trick or treat), and then there’s Easter with the eggs and the bunnies (although Lent sometimes puts a damper on that one), and December isn’t too shoddy of a chocolate month either. February should most definitely not be the month of chocolate for me, it should be the month of diet and exercise.  Oh, for a little motivation!  

Here is my menu for the week.  (Last week New Recipe update: I made the broccoli cheese soup but I pitched it, not because it wasn’t good, but because I waited too long to put it in the crockpot, and then tried to make up time by using the stove, and then burned/curdled it, and then quickly through together a pretty lame dinner.  The creamy chicken enchiladas were delicious, and I had to substitute something for the Honey Mustard chicken (snow days really through me off) so I can’t report on that one.

Tuesday

Spaghetti with Meatballs (I use Prego and frozen meatballs)

Garlic Bread (store bought)

Wednesday

Mexican Pizza

Cheddar Baked Chicken

Salad

Friday

Pizza night

    Amen on the February=chocolate (and love of course)!! Though everyday in my house = chocolate. Whatever keeps Mommy happy, right?! 🙂

    Can I just say that I love your honesty…burned the soup…threw together something less than stellar… and Prego an frozen meatballs! You ARE real!!

    We've recovered here in Atlanta after my husbands 20 minute commute turned into 12 hours! Luckily we were stocked up on food and the boys enjoyed the snow. Janey is getting so big and so cute too. Glad all are well up north.

    Don't forget November, the month of giving thanks for chocolate. I will never forget when my son's doctor suggested I give up dairy and chocolate while I was nursing him during the months of October, November and December. I thought I would crack! Happy weekend : )

    I made the broccoli cheese soup and only one child did not like it (but she doesn't "like" cheese in things). But I made a few alterations. I did make it on stove, I used whole milk instead of whatever it called for (condensed?). I was doubling it, but I only had one box of chicken stock, so I didn't double that. Then I just added milk until it looked good to me (I didn't measure the milk). I microwaved the broccoli to defrost it before putting it in. Then I brought it almost to a boil. I grated my own sharp cheddar, maybe about 6 oz. and added that after I put most of the broccoli chunks with some of the liquid in my Ninja blender. It was really good if you like broccoli cheese soup-which I love. So maybe you can try again-if you have broccoli lovers in the house. If not, I wouldn't bother. 🙂

    PS. Love the menus! I have been horrible with planning a menu, so I have been mostly stealing your plans. I am currently 18 weeks pregnant with number 7, and the rest are ages 15 to 7. So, I'm busy and my menu planning/preparation has been awful. 99% of the problem is coming up with the ideas, and nothing sounds good to me lately. Nothing. I also make the Honey mustard chicken and most kids liked that. I think the mustard seeds from the grainy mustard freaked out my 15 year old, but most just ate it. 🙂 So, thanks for posting those and for the book summary! Very helpful and lots to think about!

    You should definitely try the chicken–I made that and the enchiladas from your page last week and both were BIG hits here. The chicken was super easy, too:) Thanks for doing this–it's really inspired me to organize and plan more:)
