Quietness and Cookies

It has been a beautiful September and I’ve been enjoying it thoroughly…trying to appreciate the open windows, and brilliant sun and blue sky.  Taking stroller walks and bike rides with Janey and turning my head from the dead squirrel road kill in the street-the crazy squirrels who need to stock up before winter and get a little too daring-at least one a day around here seems to take it too far.  (I hit one in my car last week and it always makes me feel just awful and shivery.)

Like the squirrels, we all know what’s ahead but I am trying hard to not let that cross my mind even for a moment.  Let’s pretend it is going to be September till about May, then start over.  Geez, that would be perfect wouldn’t it?

Today I am making these for an after school snack.  They are our second favorite after chocolate chip.

Peanut Butter Cookies

Mix together in bowl:

1 cup softened butter

1 cup creamy peanut butter

2 eggs

1 cup sugar

1 cup brown sugar

2 1/2 cups flour

1 tsp baking powder

1/2 tsp salt

1 1/2 tsp baking soda

Roll or scoop into balls, and mash down lightly in a criss cross pattern with a fork dipped in granulated sugar.

Bake for 8-10 minutes at 375.

    It is so interesting reading blogs from all over the country. We live in Florida and can't wait for even the tiniest break in the weather–and by tiny I mean a day in the 80s with about 50% humidity. We will still be sweating our bottoms off down here well through October–and even then our "cold" only comes in the form of fronts. Can't wait not to be running the air for a few months! Headed up to Penn State in about three weeks and we are so excited to wear jeans and sweaters and see the leaves change 🙂 Greetings from opposite world!

    Unfortunately for us 3 out of 4 kids have severe allergies to nuts! Bummer, hugh? Those look so yum.

    The cookies look so good. Only 1 son left at home so I don't bake nearly as much as I used to. I was so happy when my son at college (in AZ) just asked me to send him cookies with his birthday card.
    I ran over a squirrel once, on my way to church of all places. I just said a prayer and thought it was God's way of telling me to slow down (I was definitely hurrying). I think that now everytime an animal runs across the road and I need to brake. I need to slow down.
    Love fall! I live in NC and came here from Northeastern CT. When I first moved here a person said to me "wait until you see the falls here, they are so pretty". I thanked them and thought, I just moved here from New England, we live for fall! LOL
    Enjoy your time with Miss Janey, she is a doll and I love when you post pics of her. 🙂
