Oatmeal Butterscotch Cookies

Patrick and I made these yesterday-I was desperate for a little change for our stand-by chocolate chip cookies.

They were delicious.

1 cup butter

2 eggs

1 cup white sugar

1 cup brown sugar

2 cups all-purpose flour

1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

2 cups quick cooking oats

1 cup butterscotch chips

1. Preheat oven to 350 degrees.

2. In a medium bowl mix butter, sugars, and eggs till smooth.

3. Add flour, baking powder, soda, salt and oats to butter mixture.

4. Don’t forget the chips!

5. Drop on lightly sprayed cookie sheets.

6. Bake for about 9 minutes until brown and crispy around edges.

    Great minds think alike! I made these yesterday too! Though my recipe split the butter into 1/2 cup butter and 1/2 oil. I love them with butterscotch and love them with regular chocolate chips! Thanks for posting! http://allrecipes.com/recipe/cowboy-oatmeal-cookies/detail.aspx?

    These are my absolute favorite cookies in the whole wide world! They are best served refrigerated (in my humble opinion). I can only make them a couple times a year as I can't stop eating them until they are gone.

    Oh those look great! We'll have to give them a try. My husband asked if we could make the classic chocolate chip cookies yesterday since he heard it was National Chocolate Chip day. Given that he's a chocolate addict, he said "Now that's a GREAT holiday!" Thanks for sharing.

    These are so yummy! I made them more healthy by replacing half the butter with coconut oil & oatmeal flour instead of white flour. Still just as yummy!

    hi – thanks for posting your recipes – i have made a bunch of them and they never disappoint.

    i wanted to let you know i made these cookies – but instead of butterscotch chips, i used an 8 oz. bag of heath bits (in the baking section). they were incredible! thanks for sharing =)
