Quick and Easy Pasta Primavera

3/4 of a 16 oz. box of pasta (I use rotini or ziti)

1/4 cup butter

1 envelope Knorr’s vegetable soup mix

1 1/2 teaspoon all purpose flour

2 cups milk

2 TBS grated Parmesan cheese

1. Bring a large pot of water to a boil and add pasta.  Cook till al dente, and drain.

2. In a saucepan melt butter.  Blend Knorr soup mix with flour and milk, and then add to saucepan.  Stir.  Bring to a soft boil, and then reduce heat to low and simmer for 7-10 minutes.  Stir in grated cheese.

3. Toss with cooked pasta and serve.

(This makes enough for all seven of us-I usually serve with a big salad and garlic bread.)

    yum! I always love your recipes so will definitely try this one! made your chicken enchiladas last night, figuring I could keep the seasoned chicken out for the picky kids, but no luck, but I loved them! Our fave recipes are the breadsticks and slow cooker chicken fettucine -both those are gone within minutes and often requested!

    You use less than 1 lb of pasta for 7 people??? I use 1.5 lbs for 6 of us, and my oldest kid is only 7. That is planning to have leftovers for my husband to take to work, but STILL, apparently we eat a LOT. 🙂

    This sounds good! I am also in awe of how in the world you make 3/4 lb of pasta stretch for 7 people?! I have a family of 5 and we eat an entire pound. Guess that's why my hubby and I need to lose a few.:)

    YUM. this is making my stomach rumble when I should not be hungry. That is a good sign for you and a bad sign for me.
