Blueberry Zucchini Bread

This recipe makes 4 mini-loaves.  Perfect for sharing.

3 eggs

1 cup vegetable oil

3 teaspoons vanilla extract

2 cups white sugar

2 cups shredded zucchini

3 cups all purpose flour

1 teaspoon salt

1 teaspoon baking powder

1/4 teaspoon baking soda

3 teaspoons ground cinnamon

1 pint fresh blueberries

Preheat oven to 350 degrees.  Lightly grease 4 mini-loaf pans.

In a bowl, beat together eggs, oil, vanilla, and sugar.  Fold in the zucchini.  Beat in the flour, salt, baking powder, baking soda, and cinnamon.  Fold in blueberries and transfer to mini-loaf pans.  (They will each be pretty full.)

Bake for 40 minutes or until a knife inserted in center comes out clean.   Cool in pans.

    Would that come out to 2 regular loaf pans? I only have 1 mini loaf pan and don't relish the thought of baking them one at a time;)

    Hi Jennifer-I don't know…I think it needs smaller loaves because it is so dense, but maybe a longer cooking time would do it? Good luck!

    Just came out of the oven and had a slice with a bit of butter (but I don't think it needs it)! This is such a fantastic recipe! I think it would make wonderful muffins too! I actually used frozen blueberries because it was all I had on hand and it worked perfect! Thanks so much for sharing! I found this via pinterest 😀
